    2 cups of coconut milk

    1 cup of oats

    1 vanilla pod

    1 teaspoon cinnamon

    1 banana
  • Image
    1 tablespoon coconut oil

    1 lime
Method
  • Image
    Place the oats, milk, cinnamon and vanilla in a sauce pan. Bring to a low-medium heat and cook for up to 5 minutes.

    While the oats are cooking, slice the banana in half and peel off the skin.

    Heat a pan to medium heat with the coconut oil. Place the banana half into the pan and cook for a few minutes until caramelized.

    Serve the banana on top of the porridge and add fresh lime zest.
