Tahini Cardamom Cookies

Easy to bake, these Tahini Cardamom Cookies are extra crunchy with the sweetness of sesame and cardamom.

Ingredients

    1/2 cup (80g) gluten-free flour
  • Image
    1/2 cup (50g) ground almonds
  • Image
    1/2 tsp cinnamon
  • Image
    1/4-1/2 tsp cardamom (depends how much you like it!)
  • Image
    1/2 tsp baking powder
  • Image
    1/2 tsp salt
  • Image
    1/4 cup (4 tbsp) tahini
  • Image
    1/4 cup (4 tbsp) maple syrup
  • Image
    Sesame seeds for topping

Method

  • Image
    Preheat your oven to 180*C/160*C fan assisted/350*F.
  • Image
    In a large bowl, mix together the flour, ground almonds, spices, baking powder and salt.
  • Image
    Pour in the tahini and maple syrup. Mix to combine.
  • Image
    Shape the mixture into even sized balls and place onto a baking sheet lined with parchment paper.
  • Image
    Press into flat discs using your fingers. The thinner they are the crisper they will become.

    Sprinkle some sesame seeds on top.
  • Image
    Bake for 12-15 minutes or until the edges are golden brown.
