Veggie fried brown rice

This fast dish is great for using up leftover rice; made with eggs, it’s a delicious vegetarian meal.

Ingredients

    1 tsp. toasted sesame oil
  • Image
    1/4 cup chopped onion
  • Image
    1 clove chopped garlic
  • Image
    1 tbsp.grated ginger
  • Image
    1 cup of mixed frozen veggies
  • Image
    1 cup of cooked brown rice
  • Image
    2 tbsp. low sodium soy sauce
  • Image
    1 egg
Method
  • Image
    Heat a sesame oil in a medium sized saucepan over a medium heat.
  • Image
    Add onion, garlic and ginger.
  • Image
    Sauté until fragrant.
  • Image
    Mix in the frozen veggie, soy sauce and brown rice.
  • Image
    Cook until heated through.
